Close to a 50/50 blend of Weißburgunder and Grauburgunder (Pinots Blanc and Gris) fermented for 5-6 days on the skins, pressed and moved to a 2500-liter oak cask. It then matures for 10 months on the lees before a light filtration a minute addition of sulfur at bottling.

"Tasted from the tank, the 2015 Burgunder Weiss & Grau has a clear and fresh nose. It is elegant and full of finesse on the juicy palate, with nice salinity and a fresh and aromatic finish. A bit smoky flavored, this is a very good blend of Pinot Gris and Pinot Blanc. The grapes were purchased from an organic producer friend and macerated for three to five days."
