This wine is from Staufen, grown on Gneiss, the metamorphic version of Granite… duh. This wine, interestingly, has a “significant” amount of Grauburgunder (Pinot Gris) which was co-planted within the vineyard. The wine is 100% whole cluster and fermented with a long carbonic phase; it is finished with a few punch downs. A total fermentation of 20 days and was aged for about 18 months in used barrels.
